Instructions
Combine all of the ingredients and place in the refrigerate for a few hours. That's it!

Easy and Healthy Vegan Cole Slaw
Ingredients
- 1 bag shredded cabbage or slaw mix of your choice with carrots (10oz bag)
- 2 teaspoon distilled vinegar
- ⅛ cup sugar (about 2 tablespoons)
- ⅛ teaspoon yellow mustard
- 1 jalapeno, blended/pureed (optional)
- ½ cup mayonnaise, Follow Your Heart Soy Free Vegenaise for a healthier option
- ⅛ cup carrots, shredded (add only if it is not included in the slaw mix already)
- salt
- black pepper (optional)
Instructions
- Whisk together the vinegar, sugar, mustard, and jalapeno (optional) .
- Slowly add the mayonnaise and whisk again.
- Add the cabbage and carrots to the mixture.
- Taste and add salt accordingly. Black pepper is optional and can be added if desired.
- Combine it well and refrigerate for a few hours.
- Enjoy cold!

Keep it simple and buy a prepackaged bag of slaw mix. I sometimes purchase broccoli slaw and other times I purchase cabbage slaw. Both taste great!
I wouldn't even attempt to make it without mayonnaise. If you are running low on mayo, then hold off until you can grab more.
