You won’t know it’s healthy or vegan, trust me!
This healthy vegan cole slaw recipe includes fresh cabbage mixed with apple cider, sugar, and spices. It pairs well with all types of foods but make it with BBQ foods, burgers, and tacos to elevate the texture of the meal.
Easy and Healthy Vegan Cole Slaw
The crunchy vegetables that make up cole slaw with a sweet vegan mayonnaise based sauce is such a delight when paired with certain foods. I remember eating cole slaw at Kentucky Fried Chicken as a child. It was actually the first place I ever had it. In fact, I remember the first time I had it, thanks to my Dad.
What vegetables to use
Keep it simple and buy a prepackaged bag of slaw mix. I sometimes purchase broccoli slaw and other times I purchase cabbage slaw. Both taste great!

Is mayonnaise required?
I wouldn’t even attempt to make it without mayonnaise. If you are running low on mayo, then hold off until you can grab more. It’s actually that serious and MUCH needed. Sorry folks. Don’t let the mayonnaise stop you though! If you want to try a healthier mayonnaise, then give this vegan version a try!
Is creamy coleslaw healthy?
It can be! It all depends on what dressing is used to mix with it and if it meets your dietary restrictions. Be sure to use ingredients that fit your lifestyle. For me, Vegan mayonnaise is a must have.
Is coleslaw healthy for diabetics?
It’s true, coleslaw has sugar. To make a diabetic friendly cole slaw, simply skip the sugar or use a sweetener that meets diabetic needs.
How can I make it spicy?
I would blend a jalapeno and then mix it with the mayonnaise to make this vegan cole slaw taste even better. It’s great with recipes that already have a kick to it and even better with sweet bbq! A pulled chicken sandwich will pair well a jalapeno slaw.
What can I eat with coleslaw?
I have a few recipes right here that pair well with this recipe. Chicken Kheema being my number 1 favorite! It also pairs nicely with Masala Chicken Wings, Chana Masala, Tandoori Fish, and Barbacoa. You can even try it as a snack. If you want to pair it with Indian food, then I would eat it as a side with any fried dish such as bhajiya/pakora.
Use this recipe for a dressing
Turn this recipe into a healthy coleslaw dressing by adding the end result to a salad and tossing it with your favorite greens. The mixture of vegan ingredients and wholesome fiber makes this recipe a great addition to any meal.
Can you freeze coleslaw?
You can, but I recommend just keeping it in the refrigerate for a few days (if it even lasts that long). Cole slaw pairs well with so many foods that you might catch yourself eating more often then you planned.
Where did it orignate?
This can be a question for google. No joke! I grew up in Arkansas and cole slaw was always on the menu. With that experience, I can say that it originated in the southern part of America. Either way, its tasty and pairs well with my tandoori fish as tacos and other bbq foods. Hence, let’s get to cooking. I mean, mixing…
How is coleslaw made?
Mix the vegetables with a dressing and let the flavors marinate together. The more they marinate the better the coleslaw will taste.
A mix of cabbage and carrots, vinegar, sugar, mustard, mayonnaise, and salt. That’s it. Mix it all together and refrigerate until you are ready to eat. It pairs well with bbq foods. So be sure to add it to the menu at your next gathering.
