💥 This weekend we are celebrating my 🥢 loving kid’s pre-k graduation! With shelter in place + quarantine life, we didn’t get to throw her a bash... You know, make a big deal out of it. Because, IT IS A BIG DEAL 😭. So, this weekend I am going all out for her and breaking her the news that she got accepted into REMOTE LEARNING KINDERGARTEN!!!⁣

Her bash will include homemade sushi, fresh made noodles, and tofu! She loves them all more than anyone else I know. But shhhhh... IT’S A SURPRISE and you all are invited via IG Stories!!⁣

😷 Masks have become the norm around here. Before heading out for walks, these two divas of mine ask for theirs. I don’t know if I should be happy or sad. Mixed emotions perhaps? 😭⁣⁣ It’s hard for us adults, imagine what the kids are going through. ⁣⁣⁣

My two are accustomed to daily adventures. We used to go somewhere everyday, and then out of nowhere it all came to a sudden stop. ⁣⁣⁣

If you follow my stories, then you know we have been social distancing to the T. I cook every meal, clean my own house, watch my girls 24/7, and still manage to work from home. It’s hard AF but for the safety of my family, there is no other option I find fit. Yes, I am counting my blessings that none of us are considered high risk and I am able to work from home at the cost of my sanity. But even then, we shelter in place💯! ⁣

Why? Because MANY of my friends and family members have been affected. I know first hand what it’s like to fear losing a loved one because of this 🌍 pandemic. We stay home for a reason AND the world really needs you to do the same. ⁣⁣⁣⁣⁣

Yes, I want to go on vacation, hop on a plane and go see my widowed mom, take my kids to the park, have some me time... but it’s not worth the cost of another life. ANY LIFE. ⁣⁣⁣⁣⁣

🥔 Bhajiya (Pakora)... I am a sucker for ALL foods fried and after so many DM’s yesterday, I’ve realized you are too!! So I am sharing this recipe on the feed today 😋 ⁣
⁣
RECIPE 👇🏼⁣
⁣⁣
INGREDIENTS⁣⁣
• 2 cups besan/chick pea flour⁣⁣
• 1 tbsp coriander powder⁣⁣
• 1/8 tsp turmeric⁣⁣
• 1/2 tsp oil⁣⁣
• 1 tsp coarse ground black pepper⁣⁣
• 1 tsp red chili powder (more or less)⁣⁣
• 1 tsp salt (more or less) ⁣⁣
• Pinch of baking powder (half the size of your pinky nail)⁣⁣
• about 4 cups of thinly sliced red potatoes, sliced into rounds (I keep the skin on) ⁣⁣
* hot water (that you can still touch with your hand)⁣⁣
⁣⁣
METHOD⁣⁣
-Combine all of the ingredients in a bowl except potatoes and hot water. ⁣⁣
-Now add a little hot water at a time and mix with your 🖐 to make a thick paste (like mashed potatoes) ⁣⁣
-continue to add hot water a little at a time until you form a batter as thick as pancake batter. Be sure to mix with your hand still. ⁣⁣
*adding a little water at a time will help prevent clumping of the flour. ⁣⁣
⁣⁣
Dip thin sliced RED skinned potatoes or your favorite raw vegetables in the batter and fry until golden brown on med-high heat. ⁣⁣
⁣⁣
Enjoy it with ketchup or my favorite @maggiindia chili garlic sauce! ⁣⁣
