Ingredients

bag
shredded cabbage or slaw mix of your choice with carrots (10oz bag)

teaspoon
distilled vinegar

sugar (about 2 tablespoons)

yellow mustard

jalapeno, blended/pureed (optional)

mayonnaise,

for a healthier option

carrots, shredded (add only if it is not included in the slaw mix already)
salt
black pepper (optional)
Instructions
Whisk together the vinegar, sugar, mustard, and jalapeno (optional) .
Slowly add the mayonnaise and whisk again.
Add the cabbage and carrots to the mixture.
Taste and add salt accordingly. Black pepper is optional and can be added if desired.
Combine it well and refrigerate for a few hours.
Enjoy cold!

This recipe stores well in the refrigerator for a few days.
For a vegan mayonnaise option, try Follow Your Heart Soy Free Mayo. Otherwise, I recommend Helmann's or Best Foods Brand Mayonnaise.
