Baked Garlic Salmon with Peppers
A quick salmon recipe stuffed with thinly sliced garlic, chili peppers, and spices. Trader Joe's Salmon is used to get a delicious flaky end result.

Ingredients
2
salmon filets with skin (norwegian farmed atlantic salmon in a bbq cut is my favorite)
4-6
cloves
thinly sliced garlic
1
sliced chili pepper (jalapeno, serrano, or thai chili depending on your spice tolerance)
garlic powder (optional
coarse salt
coarse pepper
extra virgin olive oil
Instructions
Prepping the Salmon
Heat oven to 400 degrees.
Oil the skin-side of the salmon and place it on your cooking pan with the skin down.
Gently cut multiple slits on the pink flesh part of the salmon making sure the cuts are big enough to fit your thinly sliced garlic and chili peppers.
Stuff garlic and chili peppers in each slit.
Sprinkle coarse ground black pepper, coarse salt, and garlic powder on top of the fish.
Drizzle cooking oil on the fish until it is coated well.
Place the pan in the oven and cook for about 12 minutes (could vary based on thickness).
Enjoy hot with a side of
slaw salad,
roasted/steamed veggies
, or
white rice
.
Notes
This salmon can also be grilled. Place directly on a grill and cook with a cover until desired temperature.
